What's for dinner? (part 2)

Earlier in the summer I shared some recipes we've been eating lately.  Here are the latest winners.



Cinnamon roll pancakes. We made these on Labor Day and wow, they were good.  The recipe says it only makes 4 pancakes so I doubled the recipe.... but I certainly didn't need to!  The pancakes were huge and so filling.  I only let myself have about 1/3 of one, and I felt sick even after that (I don't love sweets in the morning).  We had lots left over to reheat the next morning for breakfast. (Haley, you will love these!!)



Fish tacos.  I'm not sure if I've ever shared this recipe with you, but we love it.  We've been eating these fish tacos ever since Garrett and Rob started bringing home fresh fish when we lived in Virginia.  Now, I unfortunately have to buy my fish from the grocery store, but these tacos are still delicious.



Baked Chicken Creamy Taquitos from Our Best Bites.  These are SO good.  The first time I made them, I used store-bought tortillas, and they turned out really well.  The second time I made them, I used homemade tortillas and they were awesome again.  You have to try these.  You can also make a bunch ahead of time and freeze them after they are assembled.  Or, you can bake them all at once and eat the leftovers for dinner the next night, like I did.

Colleen's Slow Cooker Jambalaya Recipe

Jambalaya.   Even though this recipe calls for the slow-cooker, I don't use it.  I just saute up the chicken, then add the onion, bell pepper, and sausage and saute them for a while.  Then add all your other ingredients listed (I left out the celery and shrimp [I'm too cheap], and only added half the spices since my family can't handle them!  I just add more spice to my own bowl).  This is a really great dish and also makes good leftovers.  I also add a couple cups of cooked brown rice to make it stretch for more meals.

Jiaozi (Chinese Dumplings)

Chinese dumplings.  Mine didn't look this good, but they sure tasted great!  We boiled them (rather than frying or steaming), and they turned out really well.  The recipe says it makes 60, so I halved it all and we have leftovers for lunches.  I still had extra filling after using up all my dough, so I stir-fried it in with some brown rice and served it on the side.  Really good. (I used ground beef instead of pork, but I bet the pork would taste even better).  The hardest part was rolling out the dough thin enough, but thankfully Garrett was around to help.



Grilled Ribeye Steak with Onion Blue Cheese Sauce.  The Pioneer Woman hardly ever disappoints.  We've been having fun with our new grill, so I had to try these out (the recipe says to just cook the steaks on the stove, but we grilled them.  To be honest, the cream sauce was a bit too rich for my tastes.  If I made this again I'd just serve the steaks with caramelized onions and blue cheese on top (leaving out the cream).

JDawgs.  A "must" if you are in Provo!  A blogger created this copycat recipe so we had to try it.  Honestly, it just tasted like BBQ sauce so I was pretty disappointed.



Petite lasagnas.  I used ground beef instead of turkey, and they were great!  I made a double batch and froze half of them.  Also, the recipe calls for two wonton wrappers for each lasagna, but instead of putting one on top I just folded the tops over from the bottom wonton, so I only had to use one per lasagna.

Yummy Honey Chicken Kabobs Recipe

Chicken kabobs.   We grilled these with chicken, bell peppers, onions, and tomatoes.  Served on top of brown rice with soy sauce.... sooo good.  And healthy! (besides the soy sauce I guess)
